Diet Watcher Cobbler

Stay on track without sacrificing your sweet tooth.

Yield: Serves 12

Ingredients

  • 2- 16oz. bags any frozen fruit
  • 1- 18.25oz. box yellow cake mix
  • 1- 12oz. can diet Sprite or diet 7-Up

Instructions

  • Place both bags of frozen fruit into a 13 x 9-inch baking dish (do not thaw)
  • Sprinkle dry cake mix over the top of frozen fruit
  • Pour entire can of diet sprite or diet 7-Up over mixture
  • Cover with foil and bake 20 minutes
  • Uncover and bake an additional 40 minutes

If you put some of the diet Sprite in a spray bottle you can spray down the dry spots after you pour the rest of the can in.

I have made this a number of times with peaches, cherries and blueberries. Did not like it with blueberries.

I am having trouble wetting the all the cake mix. After the 20 minutes there are noticeable spots of dry cake mix. Is there a trick to making sure all the cake mix has saturated?
