Diabetic Strawberry Jam

Perfect pairing for Peanut Butter

Yield: 1 and 1/4 cups

Ingredients

  • 1 c. berries
  •   <p>
        <li>
          <div align="left">
            3/4 c. sugar-free strawberry soda
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            1 pkg. strawberry sugar-free Jello
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            3 packets sugar substitute such as Splenda or Equal
          </div>
        </li></ul></font>
      </p>
    

    Instructions

    1. Mash the berries, add soda pop and cook 1 minute
    2. Remove from heat and stir in Jello until dissolved
    3. Stir in sweetener and pour in jars
    4. Seal and store in refrigerator
    5. You may use other fruits such as raspberries, peaches or cherries.

    do you have a substitute for diet strayberry soda? I can't find any strawberry soda The recipe ask for diet strawberry jam to have diet strawberry soda . I having no luck finding it and Ithought there may be a replacement instead of the diet strawberry soda

    I want to make this jam, but have a few questions? Is it one cup of berries before you mash them, or after? Also cook for one minute. Does this mean to Boil for one minute? I assume over medium heat?
