Diabetic Peanut Butter Balls

Great for holidays or any special occasion!

Exchanges: 1 ball = 1/2 fruit and 1/2 fat. Calories per ball = 88. Carbohydrate = 6 grams. Protein = 2 grams. Fat = 7 grams.
Yield: Makes 14 balls


  • 1/3 c. peanut butter
  • 1 tsp. vanilla
  • 2/3 c. unsweetened coconut, shredded
  • 1/4 c. chopped nuts
  • 1 tsp. lemon rind, chopped very fine
  • 1/2 c. raisins


  1. Mix all ingredients together
  2. Form into bite size balls
  3. Chill until firm
