Diabetic Oatmeal Cookies

For a traditional, simple and easy version, try these tasty cookies!

Exchange: 1 bread
Yield: 24 cookies (1 cookie serving)

Ingredients

  • 1 1/2 c. all purpose flour
  • 1 1/2 c. reg. oatmeal, uncooked
  • Sugar substitute to equal 1/2 c. sugar
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. reduced calorie margarine, softened
  • 3 tbsp. cold water

Instructions

  1. Combine all ingredients except margarine and water
  2. Cut margarine into dry mixture with pastry blender or knife; blend until mixture resembles coarse meal
  3. Sprinkle cold water over surface; stir with fork until moistened
  4. Roll dough to 1/4 inch thickness on waxed paper
  5. Cut into 24 round or squares
  6. Place cookies on non-stick cookie sheet
  7. Bake at 350 degrees for 15 minutes

they are OK but alttle dry and tasteless might try them again with some vanilla flavoring
