Diabetic Meatloaf

Just like Grandma used to make!

Exchanges: 1 serving = 3 lean meat and 1 fat. Calories per serving = 186. Carbohydrate = 2.6 grams. Fat = 14.8 grams. Protein = 21.4 grams. Sodium = 45 milligrams. Cholesterol = 86 milligrams.

Yield: Serves 9 (3 oz. per serving)

Ingredients

  • 1 beaten egg
  • ¼ cup water or broth
  • 1 cup corn flakes
  • 1 ½ lb. lean ground beef (may also use lean ground pork)
  • ⅓ cup finely chopped onions
  • 2 tsp. minced garlic
  • 1 tsp. dried thyme
  • ½ tsp. dried sage

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9-inch loaf pan
  2. Mix egg, water and corn flakes in a large bowl; let stand for 10 minutes
  3. Add remaining ingredients and mix with hands until blended
  4. Pack into prepared pan
  5. Bake 1 hour or until internal temperature registers 145 degrees
  6. Let loaf rest for 15 minutes before removing from pan and slicing
