Diabetic Meatloaf
Just like Grandma used to make!
Yield: Serves 9 (3 oz. per serving)
Ingredients
- 1 beaten egg
- ¼ cup water or broth
- 1 cup corn flakes
- 1 ½ lb. lean ground beef (may also use lean ground pork)
- ⅓ cup finely chopped onions
- 2 tsp. minced garlic
- 1 tsp. dried thyme
- ½ tsp. dried sage
Instructions
- Preheat oven to 350 degrees F. Grease a 9-inch loaf pan
- Mix egg, water and corn flakes in a large bowl; let stand for 10 minutes
- Add remaining ingredients and mix with hands until blended
- Pack into prepared pan
- Bake 1 hour or until internal temperature registers 145 degrees
- Let loaf rest for 15 minutes before removing from pan and slicing

No stats given with it; my wife is recently diagnosed as diabetic. How can she calculate with no idea what counts for what??
