Diabetic Meatloaf

Just like Grandma used to make!

Exchanges: 1 serving = 3 lean meat and 1 fat. Calories per serving = 186. Carbohydrate = 2.6 grams. Fat = 14.8 grams. Protein = 21.4 grams. Sodium = 45 milligrams. Cholesterol = 86 milligrams.

Yield: Serves 9 (3 oz. per serving)

Ingredients

  • 1 1/2 lb. lean ground beef (may also use lean ground pork)
  • 1 beaten egg
  • 2 TBS chopped onions
  • 1 tsp. ground allspice
  • 1 c. corn flakes
  • 1/4 c. water or stock
  • 1/2 tsp. dried sage
  • 1/2 tsp. dehydrated garlic

Instructions

  1. Mix egg, water and corn flakes; let set for 10 minutes
  2. Mix with meat and remaining ingredients, being careful not to overmix
  3. Pack into an oiled loaf pan
  4. Bake at 350 degrees for 1 hour or until internal temperature reaches 145 degrees
  5. Let loaf rest for 15 minutes before slicing
