Diabetic Meatloaf
Just like Grandma used to make!
Yield: Serves 9 (3 oz. per serving)
Ingredients
- 1 1/2 lb. lean ground beef (may also use lean ground pork)
- 1 beaten egg
- 2 TBS chopped onions
- 1 tsp. ground allspice
- 1 c. corn flakes
- 1/4 c. water or stock
- 1/2 tsp. dried sage
- 1/2 tsp. dehydrated garlic
Instructions
- Mix egg, water and corn flakes; let set for 10 minutes
- Mix with meat and remaining ingredients, being careful not to overmix
- Pack into an oiled loaf pan
- Bake at 350 degrees for 1 hour or until internal temperature reaches 145 degrees
- Let loaf rest for 15 minutes before slicing
