Delicious Lentil Salad
This healthy, high-protein salad is perfect for vegetarians.
- 16 oz. dried lentils
- 3 Tbsp. sundried tomatoes in oil, plus oil from jar
- 4 finely chopped green onions
- 1/2 each finely diced red, yellow, orange and green peppers
- 1 cup fresh parsley, finely chopped
- 1 tsp. cumin
- 1/2 lemon, juiced
- salt and pepper to taste
- Prepare lentils.
- Combine all ingredients together
