Deep Dish Apple Pie

So good no one will know it is good for you too!

Exchange: 1 1/2 bread, 1 fat

Yield: 8 slices (1 slice serving)

Ingredients

  • Sugar substitute to equal 1/3 c. sugar
  • 1 TBS cornstarch
  • 1/2 tsp. grated lemon rind
  • 2 1/2 tsp. lemon juice
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 4 sm. apples, sliced
  • 1 c. all purpose flour, sifted
  • 1 tsp. salt
  • 1/4 c. reduced calorie margarine
  • 3 TBS cold water

Instructions

  1. Combine sugar substitute, cornstarch, lemon rind, lemon juice, nutmeg, cinnamon, and apple slices
  2. Place in 9 inch deep dish pie plate on baking dish; set aside
  3. Combine flour and salt; cut in margarine until mixture resembles cornmeal
  4. Blend in water with fork until all dry ingredients are moistened
  5. Shape dough into a ball. Roll out dough on floured surface, and place on top of apple filling
  6. Bake at 425 degrees for 35 minutes or until brown.
  7. For a professional touch, brush crust with a mixture of egg and milk
