Chocolate Zucchini Snack Cake

A deliciously low-fat way to get your chocolate fix.

Yield: Serves 18


  • 2 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 2 1/2 cups shredded, unpeeled zucchini
  • 1 cup granulated sugar
  • 1/4 cup baking cocoa
  • 1 1/2 tsp. ground cinnamon
  • 1/3 cup grapeseed oil
  • 1/3 cup low-fat buttermilk
  • 2 tsp. vanilla extract
  • 1/2 tsp. butter extract
  • 1/2 cup egg substitute or 3 large egg whites
  • 1 1/2 tsp. powdered sugar


  1. Preheat oven to 350 degrees F
  2. Coat a 13 x 9-inch baking pan with cooking spray
  3. Combine all of the remaining ingredients except the powdered sugar in a large bowl; mix well
  4. Spread in prepared pan and bake for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean
  5. Cool completely in pan on wire rack
  6. Dust with powdered sugar
