Cauliflower Cream Soup

If you like cauliflower, this soup is for you.

Yield: Serves 2


  • 2 cups cauliflower, diced
  • 1/2 cup fresh parsley
  • 1 cup water
  • 3 cups chicken broth
  • 1 cup cream
  • 1/2 cup water
  • salt and pepper to taste
  • 2 Tbs. olive oil


  1. Heat oil over medium heat
  2. Add cauliflower and parsley
  3. Cover and cook 10 minutes more
  4. Add water and broth and bring to a boil
  5. Cover and simmer 5 minutes
  6. Add cream, salt and pepper
  7. Heat and serve
