Cauliflower Cream Soup
If you like cauliflower, this soup is for you.
Yield: Serves 2
Ingredients
- 2 cups cauliflower, diced
- 1/2 cup fresh parsley
- 1 cup water
- 3 cups chicken broth
- 1 cup cream
- 1/2 cup water
- salt and pepper to taste
- 2 Tbs. olive oil
Instructions
- Heat oil over medium heat
- Add cauliflower and parsley
- Cover and cook 10 minutes more
- Add water and broth and bring to a boil
- Cover and simmer 5 minutes
- Add cream, salt and pepper
- Heat and serve
