Cashew Pork

An asian dish made in just minutes.

Yield: Serves 4


  • 1 pound boneless pork, cut into cubes
  • 1 1/2 Tbs. cornstarch
  • 1/3 cup spicy garlic soy sauce
  • 2 tsp. beef soup base
  • 2 cups sliced celery
  • 1- 8oz. can sliced water chestnuts, drained
  • 1- 2oz. jar sliced pimento
  • 1/4 cup dry roasted cashews
  • 4 cups hot cooked rice


  1. Combine pork cubes and next three ingredients in 2.5 quart casserole dish
  2. Let marinate 10-15 minutes at room temperature
  3. Refrigerate if allowing to marinate longer
  4. Stir in celery, cover
  5. Microwave on high 5 to 6 minutes, stirring twice
  6. Stir in water chestnuts and pimento
  7. Cover and microwave on high 1 to 1 1/2 minutes, stirring once, until mixture is hot (vegetables should be tender-crisp)
  8. Top with cashews and serve over rice
