Carrot Cabbage Slaw
A satisfying way to add crunchy vegetables to a healthy diet!
Yield: 10 servings
Ingredients
- 1/2 head cabbage
- 1 sm. onion
- 2 celery stalks
- 2 carrots
- 1 TBS reduced fat mayonnaise
- 2 pkg. sugar substitute (such as Splenda)
- 1/2 tsp. black pepper
- 2 TBS vinegar
- 2 TBS lemon juice
Instructions
- Shred cabbage and carrots
- Finely chop onion and celery
- Mix together in a large bowl
- In a separate bowl, mix together sugar substitute,pepper, vinegar, lemon juice, and mayonnaise
- Pour over shredded vegetables and refrigerate
