Caramel Apple Salad

Sweeten harvest time with this creamy dessert.

Per Serving: 181 calories, 4 g fat, 2 g protein, 32 g carbohydrates, 2 g fiber, 0 mg cholesterol, 96 mg sodium
Yield: Serves 8

Ingredients

  • 3 cups diced apples, peeled or unpeeled
  • Lemon juice
  • ½ cup unsalted dry roasted peanuts
  • 1 cup miniature marshmallows
  • 1 small box sugar-free butterscotch instant pudding
  • 1- 8 oz. can crushed pineapple
  • 1- 8 oz. container fat-free Cool Whip

Instructions

  1. Toss diced apples with lemon juice (just enough so the apples don't turn brown)
  2. Add peanuts and marshmallows
  3. In separate bowl, mix together butterscotch pudding, pineapple and Cool Whip
  4. Add to apple mixture
  5. Keep refrigerated until ready to use

I have made this many times and it is wonderful...... anytime there is a function at work I am asked to make this. It really needs to be eaten within a couple of days or it starts to get a lot of liquid in it. Try it for a wonderful surpise.
