Caramel Apple Salad
Sweeten harvest time with this creamy dessert.
Yield: Serves 8
Ingredients
- 3 cups diced apples, peeled or unpeeled
- Lemon juice
- ½ cup unsalted dry roasted peanuts
- 1 cup miniature marshmallows
- 1 small box sugar-free butterscotch instant pudding
- 1- 8 oz. can crushed pineapple
- 1- 8 oz. container fat-free Cool Whip
Instructions
- Toss diced apples with lemon juice (just enough so the apples don't turn brown)
- Add peanuts and marshmallows
- In separate bowl, mix together butterscotch pudding, pineapple and Cool Whip
- Add to apple mixture
- Keep refrigerated until ready to use

I have made this many times and it is wonderful...... anytime there is a function at work I am asked to make this. It really needs to be eaten within a couple of days or it starts to get a lot of liquid in it. Try it for a wonderful surpise.
