California Golden Raisin Rice Pudding
A golden twist to a classic rice pudding recipe.
Yield: Serves 8
Ingredients
- 8 cups milk
- 1/2 cup long grain rice
- 2/3 cup sugar
- 1/4 teaspoon salt
- 1/2-inch piece of vanilla bean
- 6 tablespoons half-and-half
- 2 cups California golden raisins
- Dash of cinnamon to taste
Instructions
Preheat oven to 300°F. Spray a 4-quart baking dish with cooking spray or butter; set aside.
Combine milk, rice, sugar, salt and vanilla bean and pour into baking dish. Bake in middle of the oven, stirring occasionally, for about 3 hours or until creamy. Remove vanilla bean; stir mixture and add raisins and half-and-half. Chill the pudding, covered, until cold. Dust with cinnamon, if desired.
Chef's Notes: Bake slowly to achieve a creamy consistency. Great when served in a tall glasses layered with fresh fruit.
