California Golden Raisin Rice Pudding

A golden twist to a classic rice pudding recipe.

Ingredients

  • 8 cups milk
  • 1/2 cup long grain rice
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 1/2-inch piece of vanilla bean
  • 6 tablespoons half-and-half
  • 2 cups California golden raisins
  • Dash of cinnamon to taste

Instructions

  1. Preheat oven to 300°F. Spray a 4-quart baking dish with cooking spray or butter; set aside.

  2. Combine milk, rice, sugar, salt and vanilla bean and pour into baking dish. Bake in middle of the oven, stirring occasionally, for about 3 hours or until creamy. Remove vanilla bean; stir mixture and add raisins and half-and-half. Chill the pudding, covered, until cold. Dust with cinnamon, if desired.

  3. Chef's Notes: Bake slowly to achieve a creamy consistency. Great when served in a tall glasses layered with fresh fruit.
