Broccoli, Olive and Egg Salad

A low-carb salad rich in nutrients.

Yield: Serves 4


  • 1 bunch fresh broccoli florets
  • 3 hard-boiled eggs
  • 1/2 cup green olives
  • 1/2 large red onion
  • Mayonnaise, to taste
  • Black Pepper, to taste
  • Paprika, to taste
  • Salt, to taste


  1. Hard boil eggs, then let cool
  2. Chop onion
  3. Mix together all ingredients
  4. Chill and serve
