It's Brownies' tempting step-sister from Atkins.

Yield: Serves 12


  • 1/2 cup butter
  • 1 cup Splenda
  • 2 tsp. vanilla
  • 2 eggs
  • 1 tsp. almond extract
  • 1 Tbs. lemon juice
  • 1/2 cup Atkins Baking Mix
  • Cooking spray



  1. Mix softened butter, sweetner, vanilla together
  2. Add eggs one at a time
  3. Add almond extract and lemon juice
  4. Stir in Atkins bake mix
  5. Pour in sprayed pan and bake at 350 degrees F for 30 minutes

I love blondies! They remind me of school lunch we use to get them. They were definitly not dietetic though!\n
