Bistro Chicken Salad
Gourmet salad with Mediterranean flair.
Yield: Serves 4
Ingredients
- 2 cups cooked penne pasta, cooked
- 1 cup cherry tomatoes, quartered
- 4 oz. crumbled feta cheese
- 1/2 cup low-fat Italian dressing
- 1/3 cup fresh basil, lightly packed and cut into strips
- 1/4 cup red onion, chopped
- 1/4 cup sun-dried tomatoes, dehydrated and reconstituted, chopped
- 2- 4 oz. boneless skinless chicken breasts, grilled or broiled, cut into thin slices
Instructions
- Toss all ingredients together except the chicken
- Top pasta mixture with chicken
- Serve warm or chilled
