Bistro Chicken Salad

Gourmet salad with Mediterranean flair.

Yield: Serves 4


  • 2 cups cooked penne pasta, cooked
  • 1 cup cherry tomatoes, quartered
  • 4 oz. crumbled feta cheese
  • 1/2 cup low-fat Italian dressing
  • 1/3 cup fresh basil, lightly packed and cut into strips
  • 1/4 cup red onion, chopped
  • 1/4 cup sun-dried tomatoes, dehydrated and reconstituted, chopped
  • 2- 4 oz. boneless skinless chicken breasts, grilled or broiled, cut into thin slices


  1. Toss all ingredients together except the chicken
  2. Top pasta mixture with chicken
  3. Serve warm or chilled
