Wet:
4 ripe bananas
1/2 cup sugar
3/4 cup skim milk
1 teaspoon vanilla
Dry:
2 cups all purpose flour
1/2 cup ground flax
1/3 cup oat bran
1/4 cup chopped pecans
2 teaspoon baking soda
1 teaspoon cinnamon
Preheat oven to 350 degrees. Mash bananas and sugar together in medium-sized mixing bowl using a fork or handbeaters. Add the milk and vanilla. Add the dry ingredients and mix smooth.
Lightly spray a 2 pound nonstick loaf pan with vegetable cooking oil spray. Pour batter into pan and bake until loaf is done - when it springs back to the touch in the center and a toothpick inserted in the center comes out clean, about 45-50 minutes.
