Bacon Cheeseburger Salad

All the flavor with out the carb-filled bun.

Per Serving: 225 calories, 15 g fat, 20 g protein, 5 g carbohydrates, ½ fiber, 66 mg cholesterol, 572 mg sodium
Yield: Serves 2

Ingredients

  • 1 Tbsp. reduced fat mayonnaise
  • 1 cup shredded lettuce
  • 2 Tbsp. cup chopped onion
  • ½ medium tomato, chopped
  • 3 oz. lean ground beef crumbled, cooked and drained
  • 4 slices turkey bacon, cooked crisp, drained and crumbled
  • ¼ cup reduced fat cheddar cheese

Instructions

  1. Stir mayo into lettuce, onion and tomato until evenly coated
  2. Toss in beef, bacon and cheese

Ditto my review on BLT salad: Who really needs a formal recipe for this?!

Again, I've been desconstructing my favorite sandwiches into ultra-low-carb salads since Day One on Atkins. In addition to the mayo here, I also use 1 T of low-carb ketchup (<1g sugars - kind of expensive but worth it) and 1 T zero-carb mustard (my favorite are coarse-grain or horseradish-mustard, but even the flaming yellow stuff will do in a pinch). Alernatively, skip the mayo and use a home-made vinaigrette instead.
