Avocado Frozen Yogurt

A frozen homemade dessert that's actually good for you, and tastes great!

Yield: Makes 12, 4-ounce servings

Ingredients

  • 6 ripe avocados, flesh removed
  • 6 oz. plain non-fat Greek yogurt
  • 1 tablespoon Truvia
  • 1 tablespoon vanilla extract

Note: Add 1 tablespoon cocoa powder for chocolate, or blend with fresh fruit purees for more flavor options.

Instructions

  1. Split six ripe avocados and remove the flesh. Chop the fruit into bite-sized pieces and place in a large mixing bowl.

  2. Add Greek yogurt, Truvia, and vanilla extract. Use a hand-mixer on low to combine the ingredients until smooth and creamy. (If adding cocoa or fruit purees, add those now.)

  3. Scoop mixture in to a freezer-safe, resealable container and let sit for at least two hours.

  4. Scoop and serve, topping with fresh fruit if you like.

Preparation Note: If you add the cocoa, blend, and skip the freezer, then you have a decadent avocado pudding. We swear it tastes like the real deal.
