
Atkins Friendly Recipe
Atkins Corned Beef and Cabbage
The low-carb version of this classic Irish dish.
Yield: Serves 4
Ingredients
- 2 cans corned beef
- 1 large head of cabbage
- 1/2 medium onion
- 1 Tbs. celery seeds
- 1 Tbs. olive oil
- Salt and pepper to taste
Instructions
- Shred cabbage and chop onion
- Place both cabbage and onion in a pan with oil
- Let this cook for 2-3 minutes
- Add both cans of corned beef
- Mix well with cabbage and onion
- Cook until all meat and vegetables are thoroughly cooked
- Add celery seed, salt and pepper
- Serve immediately

I made it this past St. Patrick's day and everyone liked it. It was fairly easy to make as well.

I feel that you use the regular fresh cornedbeef verses the cans
