Asparagus Pasta Salad
Delicious pasta and colorful fresh vegetables.
Yield: Serves 8
Ingredients
- 1 cup small shell pasta
- 1/2 to 3/4 cup non-fat zesty Italian dressing
- 1 1/2 cups asparagus, cut
- 1 tsp. oregano
- 1/2 cup carrots, sliced in thin coins
- 1/4 cup diced sweet red bell pepper
- 1/2 cup onion, diced
- 1/2 tsp. celery seeds
Instructions
- Cook pasta following package directions
- Rinse, drain and cool
- Add remaining ingredients
- Mix and marinate for six to eight hours or overnight

This recipe is simple and yummy...as well as easy to pack for work! I used regular olive oil with some salt and pepper, which was a nice alternative as well!

Why do asparagus make my pee smell funny? I love them but cant stand it.
