Artichoke Soup
A simple artichoke soup recipe.
Yield: Serves 3
Ingredients
- 1/2 pound artichokes, peeled
- 3 cup chicken broth, divided
- 4 Tbs. light cream
- Salt and pepper to taste
Instructions
- Place artichokes in a saucepan and cover with cold water
- Bring to a boil
- Cover and simmer until completely soft
- Cool in the liquid, then drain
- Place the artichokes in a blender or food processor, add half of the chicken broth and puree until smooth
- Gradually add remaining stock
- Stir in light cream and season to taste

nice tips on the veggies Claire. I made it as is and used only the hearts fran89s. Very tasty.
Oh! and I used sea salt and fresh cracked pepper.
I added some chopped veggies, carrots, zucchini and red potatos. really, really good!!
this sounds good but it would be way better if you didn't have to clean the blender

This is confusing. Is it just the artichoke heart or the entire thing?
