Apricot Souffles
An easy apricot souffle low in carbs.
Yield: Serves 4
Ingredients
- 3 eggs, separated
- 1/2 tsp. lemon zest
- 1/8 cup apricot all fruit jam
- Top with slice almonds, if desired
Instructions
- Preheat oven to 350º F
- Grease four individual souffle cups
- Combine egg yolks with lemon zest and apricot jam and mix well
- In a separate bowl, beat egg whites until soft peaks form
- Fold egg whites into yolk mixture
- Pour into prepared cups and bake for 10-15 minutes
- Dust with cinnamon and serve
