Applesauce Bran Squares

You could also enjoy these as mini muffins!

Per serving: 181 calories, 8 g fat, 3.4 g protein, 26 g carbohydrates, 3 g fiber, o mg cholesterol, 196 mg sodium.
Yield: Yields 15


  • 1 c. all-purpose flour
  • 2 tsp. cinnamon
  • 1/4 tsp. cloves or nutmeg
  • 2/3 c. miller's bran
  • 1/2 c. rolled oats
  • 2 tbsp. brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 c. margarine (room temperature)
  • 2 lg. egg whites (room temperature)
  • 1 tsp. vanilla
  • ½ cup honey 
  • 1/3 c. chopped nuts
  • 1 c. unsweetened applesauce


  1. Preheat oven to 375 degrees F. Coat a 13x9-inch baking pan with nonstick spray
  2. Place dry ingredients in bowl of electric mixer, beat on low speed for 1 minute
  3. Add margarine, egg whites, vanilla, honey, nuts, and applesauce and mix at medium speed for 1 minute or until blended
  4. Spread evenly in prepared pan
  5. Bake  25 to 30 minutes or until browned and it starts to pull away from the sides of pan.
  6. Make 3 lengthwise, then 5 crosswise cuts to make 15 bars.  Serve warm or room temperature

filling, and really quite healthy breakfast. make it ahead of time, and it's ready to run out the door with you in the morning!
