Apple Carrot Salad

A delicious addition to any cookout.

Nutrition Facts: Calories 66; Fat 1g; Fiber 2g

Yield: Serves 8

Ingredients

  • 4 large carrots, shredded
  • 1 medium apple, chopped
  • 1/3 cup raisins
  • 1/4 cup plain nonfat yogurt
  • 1/4 cup fat-free mayonnaise
  • 2 tsp. Dijon mustard
  • 2 tsp. lemon juice
  • 1/8 tsp. pepper
  • Artificial sweetener equivalent to 2 teaspoons sugar
  • 1/3 cup shredded reduced-fat Cheddar cheese

Instructions

  1. In bowl, combine the carrots, apple, and raisins
  2. In a small bowl, combine yogurt, mayonnaise, mustard, lemon juice, pepper and sweetener
  3. Pour over carrot mixture and toss to coat
  4. Stir in cheese
