Apple and Brie Eggs
Apples and brie really bring these eggs a unique flavor.
Yield: Serves 4
Ingredients
- 1 small apple; peeled, cored and chopped
- 8 eggs
- ¼ cup fat-free milk
- salt and pepper
- ½ cup diced Brie cheese
Instructions
- Coat a large nonstick skillet with nonstick spray; heat over medium-high heat
- Add apples and cook until golden and tender. Remove from skillet
- Recoat skillet with nonstick spray; heat over medium-high heat
- Beat eggs, milk and salt and pepper to taste in a medium bowl
- Pour egg mixture into skillet; scramble
- Stir in apples and Brie and cook over low heat, just until Brie melts

I love the combination of Brie and Apples and the thought of eating them in a scramble is great idea.
