Apple and Brie Eggs

Apples and brie really bring these eggs a unique flavor.

Per Serving: 223 calories, 15 g fat, 16 g protein, 5 g carbohydrates, 440 mg cholesterol, 260 mg sodium
Yield: Serves 4

Ingredients

  • 1 small apple; peeled, cored and chopped
  • 8 eggs
  • ¼ cup fat-free milk
  • salt and pepper
  • ½ cup diced Brie cheese

Instructions

  1. Coat a large nonstick skillet with nonstick spray; heat over medium-high heat
  2. Add apples and cook until golden and tender. Remove from skillet
  3. Recoat skillet with nonstick spray; heat over medium-high heat
  4. Beat eggs, milk and salt and pepper to taste in a medium bowl
  5. Pour egg mixture into skillet; scramble
  6. Stir in apples and Brie and cook over low heat, just until Brie melts

I love the combination of Brie and Apples and the thought of eating them in a scramble is great idea.

I wonder what the result would be if you caramelized the apples and filled the center of an omelet with them and the brie?
