All American Potato Salad
Perfect picnic basket fare.
Yield: Serves 8
Ingredients
- 2 lbs. medium-size red potatoes, unpeeled
- 1/3 cup thinly sliced celery
- 1/3 cup finely chopped onion
- 1/3 cup grated carrot
- 1 Tbs. plus 1 1/2 tsp. sweet pickle relish
Dressing
- 1/3 cup nonfat or reduced-fat mayonnaise
- 1/3 cup nonfat sour cream
- 2 Tbs. spicy mustard
- 1/4 tsp. ground black pepper
Instructions
- Cut the potatoes into 3/4-inch pieces, and place in a microwave or stove-top steamer
- Cover and cook at HIGH power or over medium-high heat for 8 to 10 minutes, or until tender
- Rinse with cool water and drain
- Place the potatoes in a large bowl
- Add the celery, onion, carrot, and relish, and toss gently to mix
- Combine the dressing ingredients in a small bowl, and stir to mix well
- Add the dressing to the potato mixture, and toss gently to mix
- Cover the salad and chill for at least 2 hours before serving
