Adam Hurtado's Guacamole

Biggest Loser 10's Adam shares his homemade guacamole recipe.

Yield: Makes 8 - 1/2 cup servings

Ingredients

"I love using guacamole and salsa as a low calorie topping to some of my favorite foods, and even my eDiets Biggest Loser Meal Plan meals. My guacamole recipe is pretty easy and very delicious." - Adam Hurtado, Biggest Loser 10

  • 2-3 avocados
  • 1 cup low sodium black beans (rinsed & drained)
  • 1 can low sodium corn (rinsed & drained)
  • 1 can fire roasted tomato chunks
  • 2 Tbsp. Fage Greek yogurt
  • ¼ cup chopped onion
  • 1 Tbsp. minced garlic
  • 1 chopped jalapeño (to taste preference)
  • fresh squeezed lime
  • pepper to taste.

You can use fresh ingredients but to save time you can used canned products as well. Your avocado can be mixed or chunky style per preference. I love to use this mix on my egg white omelets, salads, lettuce wraps, chicken breasts, and basically on anything that I want to add some Mexican flair to.

Instructions

Combine all ingredients and mixed to prefered chunky or creamy texture.
