Yield:Serves 4

Ingredients

  • 1 medium onion, coarsely chopped
  • 1 medium green bell pepper, coarsely chopped
  • 3/4 cup ketchup (no salt added)
  • Grated peel and juice of 1/2 lemon
  • 1 Tbs. cornstarch
  • 3 Tbs. brown sugar
  • 1/2 cup fresh squeezed orange juice
  • 1/4 tsp. ground ginger
  • 3 oranges, peeled, cut into bite-size pieces
  • 7 oz. small to medium cooked shrimp, with tails and shells removed
  • 3 cups cooked rice (no salt added)
  • Fresh chopped cilantro or parsley
  • Cooking spray
  • Lemon wedges

Instructions

  1. In large nonstick skillet, sprayed with no-stick cooking spray, cook onion and green pepper over medium-high heat until tender but not browned
  2. Add ketchup, lemon peel and juice
  3. Blend cornstarch and sugar with orange juice and ginger; add to sauce
  4. Cook, stirring until thickened
  5. Add orange pieces and shrimp; heat
  6. Serve over hot cooked rice
  7. Sprinkle with chopped cilantro
  8. Serve with lemon wedges, if desired
