Yield:Serves 2

Ingredients

  • 1/4 cup chopped onion
  • 1/2 tsp. vegetable oil
  • 1/2 cup plum jam
  • 1 Tbs. red wine vinegar
  • 1 tsp. low sodium soy sauce
  • 1/4 tsp. ground ginger
  • 2 small plums, cut into 8 wedges
  • 16 oz. pork tenderloin, cut into 8 pieces
  • Cayenne pepper

Instructions

  1. Spray 8-inch nonstick skillet with nonstick vegetable spray
  2. Add onion and oil
  3. Cook over med heat for 4 to 7 minutes, or until onion is tender, stirring occasionally
  4. Reduce heat to low
  5. Stir in jam, vinegar, soy sauce and ginger
  6. Cook for 1 to 2 minutes, or until jam is melted, stirring occasionally
  7. Stir in plums
  8. Set sauce aside
  9. Pound pork pieces lightly to 1-inch thickness
  10. Sprinkle both sides of each piece lightly with cayenne
  11. Spray a 10-inch nonstick skillet with nonstick vegetable spray
  12. Heat skillet over medium-high heat
  13. Add pork
  14. Cook for 6 to 8 minutes, or until meat is no longer pink, turning over once
  15. Serve topped with plum sauce
