Fajita Breakfast Burrito
Breakfast with a tex-mex kick
Yield: Serves 2
Ingredients
- 2 tsp. red wine vinegar
- 2 tsp. reduced-sodium soy sauce
- 5 oz. ground breakfast turkey sausage (or chicken if desired)
- 1/8 cup onion, diced
- 1/4 cup green pepper, cut into strips
- Dash of cumin
- Dash of garlic powder
- 4 medium eggs
- 1/8 cup light cream
- 1/4 cup reduced-fat cheddar cheese
- 1/4 cup fat-free sour cream
- 4 Tbsp. salsa
Instructions
- In skillet, heat vinegar and soy sauce
- Add turkey, onions and green peppers
- Season to taste with cumin and garlic powder
- Let cook for 3-4 minutes
- Combine eggs and cream
- In another skillet, cook half of egg mixture
- Tilt pan to distribute evenly across pan
- Let one side set and carefully turn over
- Repeat with remaining egg mixture
- Divide ingredients between both egg "tortillas"
- Top with sour cream and salsa

I love a good breakfast burritto but with all the cream and sour cream it was too heavy for my liking. Make yourself an omelette at home and roll it up in a tortilla and its delicious and healthy

The picture and the recipe don't 'jive".It seems in the recipe you are using the egg and the wrap and the picture has a tortilla wrap? What is the story?
