Blueberry Scones

Everyone's going to want seconds.

Blueberry Scones Photo
Yield: Serves 4

Ingredients

  • 2/3 cup uncooked oatmeal
  • 1/3 cup Bisquick reduced-fat baking mix
  • 1/2 tsp. baking powder
  • 1 Tbs. brown sugar
  • 1/4 cup fat-free (skim) milk
  • 1/2 cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 400 degrees F
  2. Combine first 5 ingredients
  3. Fold in berries
  4. Form into 4 mounds and place on baking sheet (coated with cooking spray)
  5. Bake for 10 minutes

These are good, easy, low-fat and have fiber and blueberries which are high in antioxidants!

We love these! They have replaced our Sunday morning pancake tradition. Much lighter, sweet and delicious. I definitely advice using the fresh blueberries.
