Better Blueberry Pancakes
Biggest Loser found a way to have your pancakes and eat them, too!
Yield: 2, 4 pancake Servings
Ingredients
- 1/2 cup reduced-fat buttermilk
- 1/2 cup whole-grain oat flour
- 1 large egg white, lightly beaten
- 1/2 tsp. baking soda
- 1/4 tsp. vanilla extract
- 1/4 tsp. salt
- I can't Believe It's Not Butter! Spray
- 1/2 cup fresh or frozen (not thawed) blueberries
- Sugar-free, low-calorie pancake syrup (optional)
- 100% fruit orange marmalade spread (optional)
Instructions
- Preheat the oven to 200 degrees F
- In a small bowl, combine the buttermilk, flour, egg white, baking soda, vanilla, and salt
- Whisk just until blended
- Stir in the blueberries and let stand 10 minutes
- Heat a large nonstick skillet over medium heat until it is hot enough for a spritz of water to sizzle on it
- With an oven mitt, briefly remove the pan from the heat to mist lightly with I Can't Believe It's Not Butter! cooking spray
- Return the pan to the heat
- Pour the batter in 1/8-cup dollops onto the skillet to form 3 or 4 pancakes
- Cook about 2 minutes, or until bubbles appear on the tops and the bottoms are golden brown
- Flip, then cook for about two minutes or until browned on the bottom
- Transfer to an oven-proof plate
- Cover with aluminum foil
- Place in the oven to keep warm
- Repeat with cooking spray and the remaining batter to make 8 pancakes total
- Place 4 pancakes on each of two serving plates
- Serve immediately with I Can't Believe It's Not Butter! spray, syrup and/or fruit spread if desired

it must be only in america that you can find "I can't believe it's not butter" spray. I know this butter, but to turn it into spray is going too far away.
posted Jan 5th, 2011 9:20 amNo offense, but in my country (switzerland) you can't buy half of these products and people are really less fat than in america.
keep in mind that you can eat real butter, real milk, and so one, and be thin!!!
it will taste sooo good that you will be able to not snack betwenn meals (because you know you will have later a delicious pasta plate) and that fat in food leave you satisfied earlier, (because it taste good enough to not eat all the baking trail).
Food is not so complicated.
BUT it is true i should shed a few pounds because I ate too much chocolate lately.

yummy. it really only makes 3 each 3-4" round pancakes, but either way, it's good. if your on WW, you can eat the entire batch (2 servings) for only 6.5 points. Add another point if you use 1/4C sugar free syrup. It's very filling and I recommend these.

But I'm confused by the recipe above. I only got 4 pancakes. Are they supposed to be silver dollar sized pancakes? Then I might be able to get 2, 4 pancake servings.
