
Beef and Bean Entree
A hearty Atkins diet dinner the entire family can enjoy.

Ingredients
- 1 pound lean ground beef
- 1 cup diced onion
- 1 can tomatoes with green chilies
- 1 can black eye peas
- 1/2 cup shredded cheddar cheese
- Salt and Pepper to taste
Instructions
- Brown ground beef and onions until cooked lightly
- Drain well and add everything but the cheese
- Reduce heat to low, cover and simmer 15 minutes
- Serve with cheese sprinkled over top
