Food Blogger Spotlight: Colleen from Colleen’s Kitchen

Colleen Fields CropA few months ago we introduced readers to Colleen Fields on our True Weight Loss segment where she inspired us with her 124-pound weight loss. By utilizing a whole body approach including food journaling, exercise and consulting with nutrition experts, Colleen explained how she learned to live a healthy lifestyle, which in turn, whittled down her waistline.

Along the way, Colleen discovered she was not only changing her body, she was really enjoying the new recipes she was creating, and decided it would be worth the time to share. Her blog not only makes you want to eat right off the screen, she also shares helpful recipe tips and tons of nutritional information so you know exactly what you’re eating.

Why did you start your food blog? While going through my weight loss journey, my cooking completely changed and I also found myself becoming a healthy lifestyle evangelist. I started my blog to show people that healthy cooking and eating is really easy and can taste good too, it doesn’t mean relegating yourself to a life of “rabbit food.”

How would you describe your approach to eating/health? Anything in moderation. I don’t believe in diets because they are about deprivation and that’s why as soon as the diet is over, you gain the weight back. Instead, I believe in balance and moderation in eating – healthy ingredients, portion appropriate – and maintaining an active lifestyle. This is what I stress on my blog.

Have you always had an interest in healthy food or did it come later in life? My parents are hippies and I grew up eating extremely healthy with lots of fresh, organic food. When I became independent, I found myself swinging in completely the opposite direction – I think I lived on Doritos and Diet Coke my first year out of the house. As I’ve become older and wiser, the pendulum has swung the other direction and I’ve become much more conscious about what I put into my body.

What is your favorite (or a few of your favorites) food/ingredient to use in the kitchen? Olive oil, fresh herbs, and just about any kind of veggie.

Has blogging changed the way you view food and cooking? If so, how? Absolutely. In my devotion to developing new recipes, I have flashes of flavor combination inspiration at the most random moments. When I have a dish I like in a restaurant, I find myself writing down the flavors I’m tasting and taking photographs of it. I’m so busy experimenting with new dishes that once I get it right, I don’t often have the opportunity to make it again because I’m already working on something else.

Favorite recipe to date? Slow Cooker Guinness Beef Tacos with Chimichurri Sauce  I’m very proud of this recipe, it’s just delicious, and it’s been a HUGE hit on my site.
