DIR: It’s got to be pretty easy to eat well in Hawaii! What does your diet look like, and how do you splurge?

Bethany: I’m very passionate about healthy living in general and absolutely love healthy yummy food! My eating habits consist of an almost all organic diet and I try to fuel myself with healthy food every three to four hours. I enjoy Sambazon acai smoothies, ZICO coconut water and vegetables—yes I love my veggies, especially broccoli! Many athletes focus on protein, but I’m more focused on eating vegetables. For a treat, I like to eat dark chocolate - 70% or higher is my favorite!
