This is a simple, easy recipe that never gets chilled because my family wants to eat it right away. You can dip berries, bananas, apples, pears or melons in this pudding.

2 cups skim milk
2 tablespoons cornstarch
1/4 cup sugar
1 teaspoon vanilla extract
4 cups assorted fresh fruit, sliced in large wedges.

Put 1-1/2 cups of the milk in a microwaveable container. Heat on high for 90 seconds. Meanwhile, stir the corn starch into the remaining half cup of milk. Whisk the cornstarch and milk into the heated milk. Stir in remaining ingredients. Heat, stirring every 30 seconds until the pudding is thick and heated, about 4 minutes. You can also do this recipe on top of the stove; it is advisable to use a double boiler.

Serve warm or chilled with fresh sliced fruit so guests can dip fruit in pudding.
