Turkey Club Casserole

One of the best ways to use leftover turkey! Suitable for Diabetics

Yield: Serves 6-8

Ingredients

  • 1/4 c. margarine
  • 1/3 c. flour
  • 1 c. turkey or chicken stock, heated until warm
  • 2 c. skim milk, heated until scalding hot
  • 1 1/2 tsp. salt
  • 1/2 c. blanched almonds, slivered & toasted
  • 1 c. brown rice, cooked to a yield of 4 c.
  • 2 1/2 c. diced, cooked turkey
  • 1 (3 or 4 oz.) can mushrooms, drained or 6 oz fresh, sauteed in non-stick spray
  • 1/2 c. chopped pimiento or roasted red peppers
  • 1/3 c. chopped green pepper, roasted in oven until soft
  • Peppers may be substituted with starchy vegetables like peas or corn

Instructions

  1. Cook rice
  2. In a large size pan, melt margarine, blend in flour and cook until light brown
  3. Stir in small amounts of hot broth and milk
  4. Add liquid slowly while stirring constantly.  Mixture will be thick, like paste
  5. Continue to add liquid until gravy like consistency is achieved
  6. Stir in remaining ingredients except almonds
  7. Pour into spray treated 9"x13" pan. Top with almonds and bake at 350 degrees,uncovered
  8. May omit salt for no salt low cholesterol diet
  9. For added health benefit, toss almonds with nutty wheat germ for a crunchy topping with added fiber
