Yield: Serves 6. Each serving: 3/4 cup

4 ears fresh corn, husked, steamed and chilled
1 tablespoon olive oil
1 tablespoon red wine vinegar
3 medium tomatoes, chopped
1 tablespoon grated Parmesan cheese
1 tablespoons chopped fresh parsley

Cut kernels off cobs. Mix ingredients in medium-sized mixing bowl. Chill until ready to serve. Serve salad on top of lettuce or in colorful bowl.
