Sugar Free Prune Cake

Great bakers have always known that prunes make the best cakes!

Yield:

Ingredients

  • 1 c. raisins
  • 1 c. prunes
  • 1 c. dates, chopped
  • 2 c. water
  • 2 sticks shortening or butter
  • 2 tsp. vanilla
  • 2 c. whole wheat flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 tsp. soda
  • 4 eggs
  • 1 c. chopped nuts

Instructions

  1. Boil fruits and water 5 minutes.
  2. Add shortening or butter, set aside to cool
  3. Beat 4 eggs
  4. Add vanilla, flour sifted with salt, soda and cinnamon, then fruit mixture and nuts
  5. Mix well
  6. Grease and flour cake pan, pour in batter
  7. Bake at 350 degrees for about 25-35 minutes, or until a toothpick comes clean
  8. Note: May be baked in several small foil loaf pans, cooled and frozen.

About sugar free prune cake, we won't mix water, right?

we just boil fruit only.

I love this recipe. For the diet that I am on, I can't have whole wheat flour so I used rice flour and it came out great. It is very filling. I eat a piece for breadfast with lots of water an it is very satisfying.
