A hearty potato dish that makes a great side to any meal.

6 medium red potatoes (about 1 pound)
1 Tbsp olive oil
2 tsp minced garlic
1/2 tsp crushed rosemary
1/4 teaspoon cracked black pepper to taste

Preheat oven to 375 degrees.

Wash the potatoes then cut them into bite-size chunks. Place them into a covered baking dish.

Drizzle the olive oil on top followed by dabs of the minced garlic and the seasonings.

Cover the potatoes and bake them in the oven until they are tender, about 1 hour.
