Puffed Oven Pancake

A new low-carb way to prepare your pancakes

Nutrition Facts: Carbohydrates 2.5g
Yield: Serves 6

Ingredients

  • 3 eggs
  • 1/2 cup high gluten flour
  • 1/4 tsp. salt
  • 2 Tbs. butter
  • 1/4 cup cream
  • 1/4 cup water

Instructions

  1. Beat eggs
  2. Add flour, cream, water and 1/4 tsp. salt
  3. Mix well
  4. Melt butter in skillet
  5. Pour egg mixture into hot skillet
  6. Bake at 400º F for 25 minutes until puffed and golden brown
  7. Serve with blackberry syrup, maple butter or low carb maple syrup

I've made puffed pancakes before and tried this one since I'm now on a low-carb diet. This didn't turn out at all like I expected. It was tough and not very good. I think I'll try to alter my original recipe and see if I can come up with something that is similar to that.
