Peppered Pork Chops with Corn Stuffing

Who says stuffing is just for turkeys?

Yield: Serves 6

Ingredients

  • 6 pork loin or rib chops, 1 1/4 inches thick
  • 1/3 cup finely chopped onion
  • 1/3 cup finely chopped green pepper
  • 1 tsp. onion powder
  • 1 1/4 cups soft whole wheat bread crumbs
  • 1- 8 oz. can whole kernel corn, drained
  • 1 1/4 tsp. poultry seasoning
  • 1 1/2 tsp. cracked black pepper
  • Salt to taste
  • 2 Tbs. garlic powder
  • 3 Tbs. water

Instructions

  1. Cut an opening in each chop from rib side, creating a pocket
  2. Set aside
  3. In medium saucepan, sautee onion and green pepper in liquid spice for 2 to 3 minutes
  4. Remove from heat and stir in bread crumbs, corn, and poultry seasoning
  5. Fill pocket in each chop with an equal amount of stuffing
  6. Sprinkle pork chops with cracked black pepper and salt, pressing mixture into meat
  7. Heat oil in large skillet then add chops and brown on each side
  8. Drain
  9. Add water, cover tightly and cook over low heat for 20 to 30 minutes or until tender
  10. Spoon juices over pork chops
