Pecan Ice Cream

If you like nuts, you'll love this ice cream.

Yield: Serves 10


  • 4 cups heavy cream
  • 1 cup Splenda
  • 2 Tbs. butter
  • 1 tsp. vanilla extract
  • 1/2 cup toasted pecans
  • Ice cream maker


  1. Combine the half of the cream, Splenda, and butter in a medium saucepan
  2. Cook, stirring constantly over low heat until bubbles form around the edges of the pan
  3. Let the mixture cool and put it in the ice cream machine
  4. Stir in the rest of the cream and vanilla
  5. Freeze as directedby your machine's manufacturer
  6. Add pecans after ice cream begins to harden
