Yield: Serves 6 - 1/2 cup each.

3 parsnips, peel, cut 1/4 inch discs
3 carrots, peel, cut 1/4 inch discs
1/4 cup chicken broth
1/4 cup water
2 tablespoons plain bread crumbs
1 tablespoon Parmesan cheese

Preheat oven to 350º. Lightly spray an 8 by 8 inch glass casserole dish with oil. Place vegetables in dish. Pour liquid over; sprinkle bread crumbs and Parmesan cheese on top. Cover and bake at 350º for 45 minutes or until tender.
