Yield: Serves 4. 1 cup per serving.

1-1/2 onions, peeled, sliced into 1/2-inch thick rings, separated
3/4 cup nonfat plain yogurt
3/4 cup plain bread crumbs
1/8 tsp pinch cayenne pepper
2 tablespoons flour
1/2 tsp paprika
1/2 tsp garlic powder

Place onion rings in nonfat yogurt and refrigerate. Combine crumbs and seasonings in large bowl.

Preheat oven to 450º. Spray a cookie tray with vegetable oil. Coat each ring with the yogurt then dip and press well into the breading mixture.

Place the onion rings onto the cookie tray and keep close together but do not allow to touch. Spray the tops of the onion rings with vegetable oil. Bake at 450º for 20 minutes or until crisp outside and soft inside.
