Mississippi Mud Pie

This tempting little classic will become a not-so-guilty pleasure.

Yield: Serves 8


3/4 cup flour

1/2 cup light whipped topping, divided
1/4 cup confectioners' sugar
1 cup milk
1/3 cup reduced calorie margarine
1/2 cup light cream cheese
1 small box sugar-free chocolate pudding mix


  1. Heat oven to 350 degrees F
  2. Combine flour and margarine
  3. Spread evenly over bottom of 9-inch pie pan
  4. Bake 15-20 minutes until golden
  5. Combine 2 Tbs. whipped topping, cream cheese and sugar
  6. Stir until smooth and spread over top of pie crust
  7. In another bowl, whisk together the pudding mix, milk and 1/2 cup water until smooth
  8. Spoon on top of cream cheese layer
  9. Top with remaining whipped topping
  10. Chill several hours
