Mideastern Lemon Chicken

Lots of flavor in this chicken, without all the carbs.

Ingredients


  • 1 Tbs. lemon juice
  • 1/2 cup vinegar
  • 2 Tbs. olive oil
  • 1 large cucumber, diced
  • 1 tomato diced
  • 4 tsp. lemon juice
  • 1 Tbs. olive oil
  • 2 Tbs. fresh cilantro
  • dash salt
  • 4 chicken breasts, cut up

Instructions

  1. Combine lemon juice with 1/2 cup vinegar and 2 Tbs. olive oil
  2. Marinate chicken in lemon/vinegar mix for at least 20 minutes
  3. Combine cucumber, tomato with lemon juice, olive oil, cilantro and salt
  4. Put salad in refrigerator until chicken is ready
  5. Spray non-stick skillet with low fat cooking spray
  6. Cook chicken
  7. Serve with cucumber-tomato salad
