Low Fat Texas Shredded Pork

Makes a spicy sandwich perfect for a picnic.

Ingredients

  • 1 large onion
  • 1 jalapeno pepper, minced
  • 2 lbs. pork loin, cut into 2-inch cubes
  • 1 Tbs. chili powder
  • 2 tsp. cumin
  • 1/2 tsp. coriander
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/4 tsp. cloves
  • Pinch allspice
  • 3 cloves garlic, minced
  • 2 Tbs. tomato paste
  • 2 cups beef broth
  • 2 cups chicken broth
  • 2 bay leaves
  • 1/4 cup cilantro

Instructions

  1. Cook onion and jalapeno in water until soft
  2. Add pork and stir until brown
  3. Mix in chili powder and next 6 ingredients and cook 2 minutes
  4. Add garlic and tomato paste and cook 3 minutes
  5. Stir in all remaining ingredients except cilantro
  6. Reduce heat, cover and simmer 1 hour
  7. Uncover and simmer until pork is tender and shreds easily, about 1 hour
  8. Remove pork from liquid using slotted spoon
  9. Increase heat to medium and boil cooking liquid until reduced to 1/2 cups, about 35 minutes
  10. Shred pork and mix in sauce
