Indian Chicken Salad Pockets

Curry and lime make this recipe really pop!

Yield: Serves 2

Ingredients

  • 1 1/2 tablespoons low-fat mayonnaise
  • 1 teaspoon lime juice, preferably fresh squeezed
  • 1/2 teaspoon curry paste
  • 3/4 cup (4 ounces) chopped grilled chicken breast
  • 1 1/2 tablespoons seeded, chopped cucumber
  • 1 1/2 tablespoons chopped red onion
  • 1 whole-wheat pita (6 1/2" diameter), cut in half
  • 2 leaves green leaf lettuce

Instructions

  1. In a medium bowl, combine the mayonnaise, lime juice, and curry paste. Whisk to blend.
  2. Add the chicken, cucumber, and onion. Mix well.
  3. Spoon the mixture evenly into the pita halves. Add the lettuce.
  4. Serve your Indian chicken salad pockets immediately.

This is the best chicken salad i have ever had and i never eat what i am suppose to eat and never eat right but this chicken salad will make u start eating wright k it is good.

Add in some grapes for a little sweetness. This is so good!

I made this once and now I make this all the time and love it! So easy to make in a few minutes, lite and doesnt give you that heavy feeling. can eat two of them and still in low calories combined. only random thing i had to buy was the curry but that one jar is lasting me forever and can now make it whenever!
